Oliver has, without a doubt, a dazzling personality. Fruitiness explodes on the nose: fresh grapes, elderflower, zinging citrus and nectarine mingle with exotic aromas of mango and lychee. Seven months of ageing in fine lees give the wine an excellent structure and a pleasant creaminess that balances the wine’s dynamic acidity for a longer than medium finish. Oliver's trademark liveliness and barefaced honesty can be enjoyed solo or paired with grilled lemon salmon, seafood or lighter salads. Spontaneously fermented, matured on fine lees for seven months, unfiltered and organic.
